Gond laddoo (or gond ke laddoo) are traditional Indian sweets made with edible gum, often enjoyed for their rich taste and numerous health benefits. Here’s a classic recipe for making these delicious treats:
– 1 cup edible gum (gond)
– 1 cup ghee (clarified butter)
– 1 cup semolina (rava)
– 1 cup chopped nuts (such as almonds, cashews, and pistachios)
– 1 cup grated coconut (fresh or desiccated)
– 1 cup jaggery (or sugar) – grated or powdered
– 1 teaspoon cardamom powder
– 1 tablespoon poppy seeds (optional)
– Heat a pan over medium heat. Add the edible gum and roast until it puffs up and becomes crispy. Remove from heat and let it cool. Once cooled, crush the gum into small pieces.
– In the same pan, add 2 tablespoons of ghee. Heat it and then add the semolina. Roast it on low heat until it turns golden brown and emits a nutty aroma. Set aside.
– In another pan, add a little ghee and roast the chopped nuts until they are lightly browned.
– Add the grated coconut to the nuts and continue to roast until the coconut turns golden.
– In a large mixing bowl, combine the roasted semolina, roasted nuts, coconut, and crushed gond. Mix well.
– In a separate pan, add the jaggery (or sugar) and a little water. Heat until the jaggery melts and forms a thick syrup. You can test the consistency by dropping a small amount into cold water; it should form a soft ball.
– Pour the jaggery syrup into the bowl with the semolina mixture. Stir well to combine all the ingredients.
– While the mixture is still warm but manageable, grease your hands with ghee. Take small portions of the mixture and shape them into round laddoos (balls).
– Place the shaped laddoos on a plate or tray lined with parchment paper. Allow them to cool and set completely.
– If desired, roll the laddoos in poppy seeds for an extra touch of flavor and texture.
