– 2 cups long-grain white rice (or jasmine rice)
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 cup chicken or vegetable broth (or water)
– 1/2 cup grated Parmesan cheese (optional)
– 2 tablespoons fresh parsley, finely chopped
– Salt and pepper to taste
– Rinse 2 cups of rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water or chicken/vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
