The easiest ever blueberry galette is made by preparing a simple crust with flour, butter, sugar, and salt, and filling it with fresh blueberries mixed with sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Roll out the chilled dough, add the blueberry filling, fold the edges, and bake until golden brown. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.  Ingredients:

  • For the Crust
  •  1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 tablespoon sugar
  •  1/2 teaspoon salt

For the Filling:

  •  2 cups fresh blueberries
  • 1/4 cup sugar
  •  1 tablespoon cornstarch
  •  1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions:

1. Make the Crust:

  • In a food processor, combine the flour, sugar, and salt. Add the cubed butter and pulse until the mixture resembles coarse crumbs.
  •  Gradually add ice water, 1 tablespoon at a time, pulsing until the dough begins to come together.
  • Transfer the dough onto a floured surface, form it into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

2.Prepare the Filling:

  • In a large bowl, combine the blueberries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss gently to coat the blueberries evenly.

3. Assemble the Galette:

  •  Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  •  Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer the dough to the prepared baking sheet.
  • Spoon the blueberry filling into the center of the dough, leaving a 2-inch border around the edges.
  • Fold the edges of the dough over the filling, pleating as you go to create a rustic look.

4. Bake the Galette:

  • Brush the folded edges of the dough with the beaten egg and sprinkle with coarse sugar, if using.
  • Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  •  Allow the galette to cool for at least 15 minutes before serving.

5. Serve:

  • Slice and serve warm or at room temperature. Enjoy with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
