Here’s a simple recipe for Sama Ki Kheer (also known as Barnyard Millet Kheer), which is a delicious and nutritious dish often prepared during fasting:
– Sama (Barnyard Millet): 1 cup
– Milk: 4 cups (you can use full-fat milk for creaminess)
– Sugar: 1/2 cup (adjust to taste)
– Cardamom Powder: 1/2 teaspoon
– Chopped Nuts: (like almonds, cashews, and pistachios) 2 tablespoons
– Raisins: 2 tablespoons
– Ghee: 1 tablespoon (optional)
– Saffron strands: A few (optional)
– In a pan, dry roast the sama on low heat for about 5-7 minutes until it turns slightly golden and aromatic. This step enhances the flavor.
– In a separate pot, add the roasted sama and 4 cups of water. Cook it until it becomes soft and the water is absorbed (about 10-15 minutes).
– Once the sama is cooked, add the milk to the pot. Let it simmer on low heat, stirring occasionally.
– Add sugar and mix well. Continue to simmer until the kheer thickens to your desired consistency.
– Stir in the cardamom powder, chopped nuts, raisins, and saffron (if using). You can also add ghee at this stage for extra richness.
– Once everything is well combined, remove from heat. You can serve the kheer warm or chilled, depending on your preference.
