1. Ingredients

For the Dough:

– 2 cups whole wheat flour
– Water (as needed)
– Salt (to taste)
– 1 tablespoon oil (optional)

For the Filling:

– 2-3 eggs
– 1 small onion, finely chopped
– 1-2 green chilies, finely chopped (adjust to taste)
– 1/4 teaspoon turmeric powder
– 1/2 teaspoon red chili powder (optional)
– Salt to taste
– Fresh coriander leaves, chopped (optional)

For Cooking:

– Ghee or oil (for frying)

2. Instructions

Step 1- Prepare the Dough:

– In a large bowl, combine whole wheat flour and salt.
– Add water gradually and knead to form a soft dough. You can add a tablespoon of oil for extra softness.
– Cover the dough with a damp cloth and let it rest for 20-30 minutes.

Step 2- Make the Filling:

– In a bowl, whisk the eggs.
– Add chopped onions, green chilies, turmeric powder, red chili powder, salt, and coriander leaves (if using). Mix well.

Step 3- Roll the Parathas:

– Divide the rested dough into equal-sized balls (about the size of a golf ball).
– Roll out one ball into a small circle (about 4-5 inches in diameter).
– Place a spoonful of the egg mixture in the center.
– Gather the edges of the dough to enclose the filling and pinch to seal it well.
– Gently flatten the stuffed ball and roll it out carefully into a circle (about 7-8 inches in diameter), ensuring the filling doesn’t spill out.

Step 4- Cook the Parathas:

– Heat a tawa or skillet over medium heat.
– Place the rolled paratha on the hot tawa.
– Cook for about 1-2 minutes until you see bubbles forming, then flip it over.
– Brush the top with ghee or oil, and cook for another 1-2 minutes until golden brown. Flip again and apply ghee on the other side as well.
– Remove from the skillet and keep warm in a container.

Step 5- Serve:

– Repeat with the remaining dough and filling.
– Serve hot with yogurt, pickles, or your favorite chutney.
