Ingredients

For the Egg Preparation

  • 4-6 eggs (hard-boiled)
  • Water (for boiling the eggs)
  • Salt (to taste)

For the Bujari Gravy

  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 medium onion (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chilies (slit or chopped, adjust to taste)
  • 2 medium tomatoes (pureed)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt (to taste)
  • Fresh coriander leaves (for garnish)

Instructions

Step 1: Boil the Eggs

  • Boil the Eggs: Place the eggs in a pot and cover them with water. Add a pinch of salt to help with peeling later.
  • Cooking: Bring the water to a boil and let the eggs cook for about 10-12 minutes.
  • Cool Down: After boiling, transfer the eggs to an ice bath or cold water to stop the cooking process. Once cool, peel the eggs and set aside.

Step 2: Prepare the Gravy

  • Heat Oil: In a pan, heat 2 tablespoons of oil over medium heat. You can use vegetable or mustard oil for added flavor.
  • Saute Onions: Add the finely chopped onions and saute until they turn golden brown.
  • Add Ginger-Garlic Paste: Mix in 1 tablespoon of ginger-garlic paste and sauté for another minute until the raw smell disappears.
  • Spice It Up: Add the slit green chilies and sauté for another minute.

Step 3: Cook the Tomatoes

  • Add Tomato Puree: Pour in the pureed tomatoes and cook until the oil starts to separate from the mixture (about 5-7 minutes).
  • Spice Mix: Add turmeric powder, red chili powder, garam masala, coriander powder, cumin powder, and salt. Mix well and cook for another 2-3 minutes.

Step 4: Combine Eggs with Gravy

  • Add Boiled Eggs: Carefully cut the boiled eggs in half or leave them whole and add them to the gravy. Gently coat them with the sauce.
  • Simmer: Let the eggs simmer in the gravy for about 5 minutes, allowing them to absorb the flavors.

Step 5: Garnish and Serve

  • Garnish: Sprinkle fresh coriander leaves on top for added flavor and freshness.
  • Serving: Serve hot with steamed rice, naan, or any bread of your choice.
