Here’s a quick and easy recipe for Egg Bhurji, a popular Indian scrambled egg dish:
– 4 large eggs
– 1 tablespoon oil or ghee
– 1 medium onion, finely chopped
– 1-2 green chilies, finely chopped (optional)
– 1 medium tomato, finely chopped
– 1/2 cup bell peppers (capsicum), finely chopped (optional)
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon garam masala
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon mustard seeds (optional)
– Salt to taste
– Fresh coriander leaves, chopped (for garnish)
– Lemon juice (optional)
– Heat oil or ghee in a pan over medium heat.
– Add cumin seeds and mustard seeds (if using). Let them splutter.
– Add chopped onions and green chilies. Sauté until the onions become translucent.
– Add bell peppers and cook for another 2-3 minutes.
– Stir in the chopped tomatoes and cook until they soften.
– Add turmeric powder, red chili powder, and salt. Mix well.
– Crack the eggs into the pan and stir continuously to scramble them. Cook until the eggs are fully cooked and the mixture is well combined with the vegetables and spices.
– Stir in garam masala and cook for another minute.
– Garnish with chopped coriander leaves and a squeeze of lemon juice if desired.
– Serve hot with toasted bread, paratha, or as a filling in wraps.
