Easy Vegan Galouti Kebabs

Originating from the culinary traditions of Awadh in India, Galouti Kebabs are renowned for their rich taste and melt-in-your-mouth texture. This vegan twist on the classic recipe retains all the deliciousness while omitting the meat, making it perfect for vegans and non-vegans alike.
Ingredients:
- 1 cup boiled and mashed potatoes
- 1 cup boiled and mashed chickpeas
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped coriander leaves
- 2 tablespoons finely chopped mint leaves
- 1 tablespoon ginger-garlic paste
- 2 green chilies, finely chopped
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon black pepper powder
- Salt to taste
- 2 tablespoons cornflour or bread crumbs
- Oil for frying
Instructions:
STEP 1- Prepare the Mixture: In a large mixing bowl, combine the mashed potatoes, mashed chickpeas, chopped onions, coriander leaves, mint leaves, ginger-garlic paste, green chilies, garam masala, coriander powder, cumin powder, black pepper powder, and salt. Mix well until all the ingredients are evenly incorporated.
STEP 2- Form the Kebabs: Divide the mixture into equal portions and shape them into round patties or kebabs. If the mixture feels too soft, you can add cornflour or bread crumbs to bind it together better.
STEP 3- Heat the Oil: In a frying pan, heat oil over medium heat. Once the oil is hot, carefully place the kebabs in the pan, ensuring they are not overcrowded.
STEP 4- Fry the Kebabs: Cook the kebabs for 3-4 minutes on each side or until they turn golden brown and crispy.
STEP 5- Serve Hot: Once cooked, remove the kebabs from the pan and place them on a plate lined with kitchen paper to absorb any excess oil. Serve hot with mint chutney, onion rings, or your favorite dipping sauce.
