Doodh Barfi is a delicious Indian sweet made from milk, sugar, and various flavorings. Here’s a simple recipe to make this rich and creamy treat at home:
– 4 cups full-fat milk
– 1 cup sugar
– 1/2 cup milk powder
– 1/4 cup ghee (clarified butter)
– 1/2 teaspoon cardamom powder
– 2 tablespoons chopped nuts (almonds, cashews, or pistachios)
– 2 tablespoons grated coconut (optional)
– A pinch of saffron strands (optional)
Measure out and prepare all ingredients. Chop the nuts and, if using saffron, soak it in a little warm milk.
In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring continuously to prevent it from sticking to the bottom.
Once the milk starts boiling, reduce the heat to low and continue to cook, stirring frequently, until it reduces to about half its original volume.
Add the milk powder to the reduced milk and mix well. Cook for a few minutes, stirring constantly, until the mixture thickens.
Stir in the ghee and sugar. Continue to cook, stirring frequently, until the mixture starts to leave the sides of the pan and thickens further. This should take around 10-15 minutes.
Add the cardamom powder, chopped nuts, and grated coconut (if using). Mix well. If using saffron, add it to the mixture at this stage.
Transfer the mixture to a greased plate or tray and spread it evenly. Let it cool for a few minutes. Once it starts to set but is still warm, cut it into pieces or squares.
Allow the barfi to cool completely and set at room temperature. Once fully cooled, it will firm up and be ready to serve.
