step 1- Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, rice vinegar, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for at least 15-20 minutes.
step 2- Prepare the Sauce: In a separate bowl, whisk together hoisin sauce, soy sauce, and a tablespoon of water. Set aside.
step 3- Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and cook until they are browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
step 4- Cook the Aromatics: In the same skillet, add a little more vegetable oil if needed. Add chopped red chilies, minced garlic, and minced ginger. Stir-fry for about 1-2 minutes until fragrant.
step 5- Combine Everything: Return the cooked chicken to the skillet. Add the sliced green onions and unsalted peanuts. Pour the prepared sauce over the chicken mixture and toss everything together until well coated. Cook for another 2-3 minutes until the sauce thickens slightly.
Serve: Remove the skillet from heat. Serve the Kung Pao Chicken hot over cooked rice. Garnish with additional sliced green onions and peanuts if desired.
