Daliya is a nutritious and versatile dish that can be prepared for breakfast or as a light meal. Here’s a simple recipe for making daliya:

1. Ingredients

– 1 cup daliya (cracked wheat)
– 2 cups water or vegetable/chicken broth
– 1 tablespoon ghee or oil
– 1 small onion, finely chopped
– 1 small carrot, diced
– 1 small potato, diced (optional)
– 1/2 cup peas (fresh or frozen)
– 1-2 green chilies, slit (optional)
– 1 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon garam masala or curry powder
– Salt to taste
– Fresh coriander leaves, chopped (for garnish)

2. Instructions

Step 1- Roast the Daliya:

Heat a pan over medium heat. Add the daliya and dry roast it until it turns slightly golden and starts to emit a nutty aroma. This step enhances the flavor and texture of the daliya.

Step 2- Prepare the Vegetables:

In the same pan or a separate pot, heat ghee or oil. Add cumin seeds and let them sizzle.

Step 3- Sauté Aromatics:

Add the finely chopped onion and green chilies (if using). Sauté until the onions become translucent.

Step 4- Cook Vegetables:

Add the diced carrot, potato (if using), and peas. Sauté for a few minutes until the vegetables start to soften.

Step 5- Add Spices:

Stir in the turmeric powder, garam masala or curry powder, and salt.

Step 6- Cook Daliya:

Add the roasted daliya to the pot and mix well with the vegetables and spices.

Step 7- Add Liquid:

Pour in the water or broth. Stir to combine. Bring to a boil, then reduce the heat to low.

Step 8- Simmer:

Cover the pot and let it simmer for about 10-15 minutes, or until the daliya is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.

Step 9- Garnish and Serve:

Once cooked, garnish with chopped fresh coriander leaves. Serve hot.

Daliya is a wholesome, comforting dish that can be enjoyed plain or with yogurt, pickles, or a side salad.
