– 2 slices of bread (your choice: whole grain, white, or sourdough)
– 1 cup of canned corn kernels (drained and rinsed if using canned)
– 1/4 cup finely chopped onion
– 1/4 cup finely chopped bell pepper (any color you prefer)
– 1/4 cup grated cheese (cheddar or mozzarella work well)
– 1 tablespoon mayonnaise (or Greek yogurt for a lighter option)
– 1 tablespoon mustard (optional, for added flavor)
– 1/4 teaspoon garlic powder
– 1/4 teaspoon paprika
– Salt and pepper to taste
– Butter or oil for grilling
– In a bowl, combine the drained corn, chopped onion, chopped bell pepper, and grated cheese.
– Add the mayonnaise (and mustard, if using), garlic powder, paprika, salt, and pepper. Mix everything together until well combined.
– Spread a thin layer of butter or oil on one side of each bread slice.
– On the unbuttered side of one slice, spread the corn mixture evenly.
– Heat a skillet over medium heat.
– Place the bread slice with the corn mixture, buttered side down, in the skillet.
– Top with the second slice of bread, buttered side up.
