Here’s a delicious recipe for homemade chocolate coconut bars that are easy to make and incredibly satisfying!
– 2 cups unsweetened shredded coconut
– 1 cup sweetened condensed milk
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 1/2 cups semi-sweet chocolate chips (or dark chocolate)
– 2 tablespoons coconut oil (optional, for smoother melting)
– In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until everything is fully combined.
– Line an 8×8-inch (or similar) baking dish with parchment paper for easy removal.
– Press the coconut mixture firmly into the bottom of the dish, creating an even layer. You can use a spatula or your hands to make it compact.
– Place the dish in the refrigerator for about 30 minutes to set the coconut layer.
– In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
– Remove the coconut layer from the refrigerator and cut it into bars or squares.
– Dip each bar into the melted chocolate, using a fork to lift it out and let excess chocolate drip off. Place the coated bars on a parchment-lined baking sheet.
– Once all bars are coated, place them back in the refrigerator for about 30 minutes to allow the chocolate to set.
