Cinnamon bread rolls start with a soft, yeast-based dough made from flour, sugar, eggs, and butter. After letting the dough rise, it’s rolled out and filled with a cinnamon-sugar mixture. The dough is then tightly rolled into a log, sliced into rolls, and allowed to rise again. Once risen, the rolls are baked to golden perfection and topped with a sweet icing made from powdered sugar, butter, and vanilla. The rolls are best served warm, offering a soft texture with a sweet and spicy cinnamon flavor. They make for a delicious breakfast or dessert treat.

Ingredients:

Dough:

  • 2 ¼ teaspoons active dry yeast
  •  1 cup warm milk (around 110°F)
  •  ½ cup granulated sugar
  •  2 large eggs
  •  ⅓ cup unsalted butter, melted
  •  1 teaspoon salt
  •  4 to 4 ½ cups all-purpose flour

Filling:

  •  ⅓ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  •  2 ½ tablespoons ground cinnamon

Icing:

  •  1 cup powdered sugar
  •  1 tablespoon unsalted butter, melted
  • 2-3 tablespoons milk
  •  1 teaspoon vanilla extract

Instructions:

1. Prepare the Dough:

Activate Yeast:

  • In a large mixing bowl, dissolve the yeast in warm milk. Let it sit for about 5-10 minutes until frothy.

Combine Ingredients:

  • Add the sugar, eggs, melted butter, and salt to the yeast mixture. Stir well.

Add Flour:

  • Gradually add the flour, one cup at a time, mixing until a soft dough forms. The dough should be slightly sticky but firm enough to handle.

2. Knead and Rise:

Knead:

  • Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise:

  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

3. Prepare the Filling:

  • While the dough is rising, prepare the filling by mixing the softened butter, brown sugar, and cinnamon in a small bowl until well combined.

4. Roll and Fill the Dough:

Roll Out:

  • Once the dough has risen, punch it down to release the air. Transfer it to a floured surface and roll it out into a large rectangle, about 15×9 inches.

Spread Filling:

  • Evenly spread the cinnamon-sugar filling over the dough, leaving a small border around the edges.

5. Shape the Rolls:

Roll Up:

  • Starting from the longer side, tightly roll the dough into a log.

Slice:

  • Using a sharp knife, slice the log into 12 equal-sized rolls.

Second Rise:

  • Place the rolls in a greased baking dish, cover, and let them rise for about 30 minutes until puffy.

6. Bake the Rolls:

Preheat Oven:

  • Preheat your oven to 350°F (175°C).

Bake:

  • Once the rolls have risen, bake them in the preheated oven for 25-30 minutes until golden brown. Keep an eye on them to avoid over-baking.

7. Prepare the Icing:

  •  While the rolls are baking, prepare the icing by whisking together powdered sugar, melted butter, milk, and vanilla extract until smooth.

8. Finish and Serve:

Cool and Ice:

  • Allow the rolls to cool slightly before drizzling the icing generously over the top.

Serve:

  • Serve warm and enjoy the soft, sweet, and cinnamon-infused rolls.
