Here’s a simple and delicious recipe for homemade chicken nuggets:

1. Ingredients

For the Chicken Nuggets:

– 1 lb (450 g) boneless, skinless chicken breasts or thighs
– 1 cup all-purpose flour
– 1 cup breadcrumbs (panko or regular)
– 1/2 cup grated Parmesan cheese (optional)
– 2 large eggs
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– Salt and pepper to taste
– Cooking oil (for frying)

For the Marinade (optional):

– 1/2 cup buttermilk or plain yogurt
– 1 tablespoon hot sauce (optional)

2. Instructions

Step 1- Marinate the Chicken (Optional):

– If using the marinade, combine the buttermilk or yogurt with hot sauce in a bowl.
– Cut the chicken into bite-sized pieces and add them to the bowl.
– Cover and refrigerate for at least 30 minutes, or up to overnight.

Step 2- Prepare the Breading Stations:

– In one bowl, place the flour.
– In a second bowl, whisk the eggs.
– In a third bowl, mix the breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, paprika, salt, and pepper.

Step 3- Bread the Chicken:

– Remove chicken from the marinade (if marinated) and pat dry with paper towels.
– Dredge each piece of chicken in flour, shaking off the excess.
– Dip in the beaten eggs, allowing excess to drip off.
– Coat with the breadcrumb mixture, pressing lightly to adhere.
