Here’s a simple and delicious recipe for cheese grits:
– 1 cup grits (stone-ground preferred)
– 4 cups water or chicken broth
– 1 cup shredded cheese (cheddar is a classic choice)
– 1/2 cup milk or heavy cream
– 2 tablespoons butter
– Salt and pepper, to taste
– Optional: chopped green onions or parsley for garnish
In a large pot, bring the water or chicken broth to a boil.
Gradually whisk in the grits, stirring constantly to prevent lumps. Reduce the heat to low and cover.
Let the grits simmer for about 20-25 minutes, stirring occasionally, until they are thick and creamy. If using quick-cooking grits, follow the package instructions.
Once the grits are cooked, remove them from heat and stir in the shredded cheese, milk or cream, butter, and season with salt and pepper.
Spoon the cheese grits into bowls and garnish with chopped green onions or parsley, if desired. Enjoy as a side dish or as a base for shrimp, eggs, or other toppings.
