Here’s a delicious recipe for cashew chicken:
– 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
– 1 cup roasted cashews
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce (optional)
– 2 tablespoons cornstarch
– 2 tablespoons vegetable oil
– 1 bell pepper (any color), sliced
– 1 cup broccoli florets
– 2 green onions, chopped
– 2 cloves garlic, minced
– 1-inch piece of ginger, minced
– Salt and pepper, to taste
– Cooked rice, for serving
In a bowl, combine the chicken pieces with soy sauce, oyster sauce (if using), and cornstarch. Let it marinate for about 15-20 minutes.
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add the remaining tablespoon of oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Then add the bell pepper and broccoli, cooking for another 3-4 minutes until the vegetables are tender-crisp.
Return the chicken to the pan, add the roasted cashews, and stir everything together. Cook for an additional 2-3 minutes to heat through.
Adjust seasoning with salt and pepper to taste. Garnish with chopped green onions.
Serve hot over cooked rice.
