Ingredients:

For the Sushi Rice:

  •  1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

For the Sashimi Toppings:

  • 8 oz (about 225g) sashimi-grade tuna
  • 8 oz (about 225g) sashimi-grade salmon
  • 4 oz (about 110g) sashimi-grade yellowtail (optional)
  • 2 oz (about 55g) sashimi-grade scallops (optional)
  • 1 small cucumber, thinly sliced
  • 1 avocado, thinly sliced
  • 1/2 cup edamame (cooked and shelled)
  • 1 small carrot, julienned
  • 1 sheet nori (seaweed), cut into thin strips
  • 2 tbsp pickled ginger (gari)

For Garnishes:

  •  2 tbsp sesame seeds (white or black)
  •  1 tbsp tobiko (flying fish roe) or ikura (salmon roe)
  •  1-2 green onions, finely chopped
  •  Wasabi (optional)
  •  Soy sauce for serving

Instructions:

1. Prepare the Sushi Rice:

Rinse the Rice:

  • Start by rinsing the sushi rice under cold water until the water runs clear. This helps to remove excess starch and ensures that the rice will have the right texture.

Cook the Rice:

  • Combine the rinsed rice and water in a rice cooker or a heavy-bottomed pot. If using a pot, bring the water and rice to a boil, then reduce the heat to low, cover, and cook for about 15 minutes or until the water is fully absorbed. Let the rice sit covered for another 10 minutes to steam.

Season the Rice:

  • While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until the sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spoon or rice paddle. Be careful not to mash the rice. Let the rice cool to room temperature.

2. Prepare the Sashimi and Vegetables:

Slice the Fish:

  • Using a very sharp knife, slice the sashimi-grade fish into thin, bite-sized pieces. Slicing at a slight angle helps create attractive, thin slices. Keep the fish chilled until ready to use.

Prepare the Vegetables:

  • Thinly slice the cucumber and avocado, julienne the carrot, and prepare the edamame by cooking and shelling them if not already done. Cut the nori sheet into thin strips for garnishing.

3. Assemble the Bowl:

  • Start by placing a generous portion of seasoned sushi rice in the bottom of each serving bowl.

Arrange the Toppings:

  • Artfully arrange the sashimi slices on top of the rice. You can place them in a fan shape or create sections for each type of fish. Surround the sashimi with slices of cucumber, avocado, julienned carrot, and edamame. Add a few pieces of pickled ginger on the side.

Garnish:
