1. Ingredients
– 500g chicken breast or thigh, cut into bite-sized pieces
– 2 tablespoons black pepper (freshly ground for best flavor)
– 2 tablespoons soy sauce
– 1 tablespoon oyster sauce (optional)
– 1 tablespoon cornstarch
– 2 tablespoons vegetable oil
– 3-4 garlic cloves, minced
– 1-inch piece ginger, minced
– 1 bell pepper (red or green), sliced
– 1 onion, sliced
– 2-3 green chilies, sliced (adjust to taste)
– Salt to taste
– Fresh coriander or spring onions for garnish

Step 1- Marinate the Chicken:
– In a bowl, combine chicken pieces, black pepper, soy sauce, oyster sauce (if using), and cornstarch. Mix well and let it marinate for at least 20-30 minutes.
Step 2- Cook the Chicken:
– Heat vegetable oil in a large skillet or wok over medium-high heat.
– Add the marinated chicken to the pan and stir-fry until the chicken is cooked through and lightly browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
Step 3- Sauté Vegetables:
– In the same pan, add a little more oil if needed. Sauté the minced garlic and ginger until fragrant.

Step 4- Combine:
– Return the cooked chicken to the pan and toss everything together. Adjust seasoning with salt and more black pepper if desired. Stir-fry for an additional 1-2 minutes to combine flavors.
Step 5- Serve:
– Garnish with fresh coriander or sliced spring onions. Serve hot with steamed rice or noodles.
