Biscuit pudding is a quick and delicious dessert that combines the simplicity of biscuits with a rich, creamy pudding. Here’s a straightforward recipe for making this comforting treat:
– 200g (about 14-16) digestive biscuits or tea biscuits
– 2 cups milk
– 1/2 cup heavy cream
– 1/2 cup sugar
– 2 tablespoons cocoa powder (optional, for chocolate flavor)
– 2 tablespoons cornstarch
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1/2 cup chocolate chips or chopped nuts (optional, for added texture)
– Fresh berries or whipped cream for garnish (optional)
– Break the biscuits into small pieces or roughly crush them. You can use a rolling pin or simply crumble them by hand.
– In a medium saucepan, combine the milk, heavy cream, sugar, cocoa powder (if using), and salt. Heat over medium heat, stirring frequently, until the mixture is warm but not boiling.
– In a small bowl, mix the cornstarch with a few tablespoons of cold milk to create a slurry.
– Gradually add the slurry to the warm milk mixture while stirring continuously to avoid lumps.
– Continue to cook and stir until the mixture thickens and coats the back of a spoon. This should take about 5-7 minutes.
– Remove the saucepan from heat and stir in the vanilla extract.
– If using chocolate chips or nuts, fold them into the pudding mixture now.
– In a serving dish or individual cups, layer the biscuit pieces and pudding mixture. Start with a layer of biscuits, then spoon some pudding over them. Repeat the layers until you run out of biscuits and pudding, finishing with a layer of pudding.
– Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours, or until the pudding is set and the flavors have melded together.
– Garnish with fresh berries, whipped cream, or additional chocolate chips if desired.
– Serve chilled and enjoy!
This biscuit pudding is a versatile and easy-to-make dessert that’s perfect for satisfying your sweet tooth with minimal effort.
