Litti Chokha is a traditional dish from Bihar, India, and here’s a simplified recipe:
1.Ingredients
For Litti
– 2 cups whole wheat flour (atta)
– 1 cup sattu (roasted gram flour)
– 1 teaspoon ajwain (carom seeds)
– 1 teaspoon kalonji (nigella seeds)
– Salt to taste
– 2 tablespoons ghee (clarified butter)
– Water as needed
For Chokha
– 3-4 medium-sized tomatoes
– 2-3 medium-sized potatoes
– 2-3 green chilies, finely chopped
– 1 onion, finely chopped
– 2-3 cloves of garlic, minced
– 1-inch piece of ginger, grated
– Fresh coriander leaves, chopped
– Salt to taste
– 1 tablespoon mustard oil
– Juice of 1 lemon
2.Instructions
For Litti
Step1-In a bowl, mix together whole wheat flour, ajwain, kalonji, salt, and ghee.
Step2-Gradually add water and knead into a firm dough. Cover and let it rest for 15-20 minutes.
Step3-Meanwhile, prepare the stuffing by mixing sattu with salt, ajwain, kalonji, and ghee. Add water gradually to make a crumbly mixture.
Step4-Divide the dough into small balls. Flatten each ball into a small disc and place a spoonful of the sattu mixture in the center.
Step5-Seal and shape into round balls again. Preheat the oven to 180°C (350°F).
Step6-Bake the litti in the preheated oven for about 30-40 minutes or until golden brown and cooked through. Alternatively, you can cook them over a charcoal or gas flame until evenly roasted and cooked.
For Chokha
Step1-Roast the potatoes and tomatoes over an open flame or in the oven until the skins char and they become soft.
Step2-Peel the potatoes and tomatoes, and mash them together in a bowl.
Step3-Add chopped onions, green chilies, minced garlic, grated ginger, chopped coriander leaves, salt, mustard oil, and lemon juice. Mix well.
3.To Serve
Step1-Serve litti hot with chokha and a dollop of ghee.
Step2-Enjoy this traditional Bihari delicacy.
