Bihari Champaran Mutton Curry is a delicious and aromatic dish that you can prepare at home. Here’s a traditional recipe to guide you through the process:
– 500 grams mutton, preferably with bones, cut into pieces
– 2 onions, finely sliced
– 2 tomatoes, finely chopped
– 2-3 green chilies, slit
– 1 tablespoon ginger-garlic paste
– 1 teaspoon cumin seeds
– 1 bay leaf
– 2-3 cloves
– 2-3 green cardamom pods
– 1-inch cinnamon stick
– 1 teaspoon turmeric powder
– 2 teaspoons coriander powder
– 1 teaspoon cumin powder
– 1 teaspoon red chili powder (adjust to taste)
– Salt to taste
– Fresh coriander leaves, chopped for garnish
– Oil or ghee for cooking
– Wash the mutton pieces thoroughly and drain excess water.
– In a bowl, marinate the mutton with turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and let it marinate for at least 30 minutes.
– Heat oil or ghee in a heavy-bottomed pan or pressure cooker.
– Add cumin seeds, bay leaf, cloves, green cardamom pods, and cinnamon stick. Sauté until aromatic.
– Add the sliced onions to the pan and sauté until they turn golden brown.
– Add ginger-garlic paste and green chilies. Sauté for a few more minutes until the raw smell disappears.
– Add the marinated mutton pieces to the pan. Stir well to coat the mutton with the onion-spice mixture.
– Cook the mutton on medium-high heat until it changes color and starts to brown slightly.
– Add chopped tomatoes to the pan. Mix well and cook until the tomatoes become soft and oil starts to separate from the masala.
– If using a pressure cooker, add enough water to cover the mutton pieces. Close the lid and pressure cook for about 4-5 whistles or until the mutton is tender.
– If cooking in a pan, add water as needed to achieve the desired consistency of gravy. Cover and simmer on low heat until the mutton is cooked through and tender. Stir occasionally to prevent burning.
– Once the mutton is cooked, check for seasoning and adjust salt and spices according to your taste.
– Garnish with chopped fresh coriander leaves.

– Adjust the amount of red chili powder according to your spice preference.
