Baingan ka bharta is a popular North Indian dish that features smoky roasted eggplant blended with aromatic spices.
Here’s a recipe to make baingan ka bharta:
1. Ingredients
– 1 large bainga (eggplant))
– 2 tablespoons oil (any cooking oil)
– 1 onion, finely chopped
– 2 tomatoes, finely chopped
– 2 green chilies, finely chopped (adjust according to spice preference)
– 1 teaspoon ginger-garlic paste
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– 1 teaspoon coriander powder
– 1/2 teaspoon red chili powder (adjust to taste)
– Salt to taste
– Fresh coriander leaves, chopped for garnish
– Lemon wedges, for serving (optional)
2. Instruction
Step 1- Roasting the Eggplant:
– Wash the eggplant and pat it dry.
– Prick the eggplant with a fork in several places.
– Apply a thin layer of oil on the surface of the eggplant.
– You can either roast the eggplant directly over a gas flame, turning it occasionally until the skin is charred and the flesh is soft. Alternatively, you can roast it in a preheated oven at 200°C (400°F) for about 40-45 minutes until the skin is wrinkled and the eggplant is soft.
– Once roasted, let the eggplant cool down. Then peel off the charred skin and discard it. Mash the roasted eggplant flesh with a fork or blend it for a smoother texture. Set aside.
Step 2- Cooking the Bharta:
– Heat oil in a pan over medium heat. You can use the same pan in which you roasted the eggplant for added flavor.
– Add cumin seeds and let them splutter.
– Add chopped onions and sauté until they turn golden brown.
– Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
– Add chopped tomatoes and cook until they turn soft and oil starts to separate.
– Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another minute.
– Add the mashed roasted eggplant to the pan and mix everything together. Cook for 5-7 minutes, stirring occasionally, to allow the flavors to blend well.
– Taste and adjust salt and spices if needed.
Step 3- Finishing Touches:
– Garnish with freshly chopped coriander leaves.
– Serve hot with roti, naan, or rice.
– Optionally, serve with lemon wedges on the side for added tanginess.
