Indian beef curry is a rich and flavorful dish, known for its deep, aromatic spices and tender beef. Here’s a simple recipe to make a classic Indian beef curry:

1. Ingredients

For Marinating the Beef:

– 500 grams (1 pound) beef, cut into cubes (preferably chuck or brisket)
– 1/2 cup plain yogurt
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon ground coriander
– 1 teaspoon garam masala
– Salt to taste

For the Curry:

– 2 tablespoons vegetable oil
– 2 large onions, finely chopped
– 2 tomatoes, finely chopped
– 2-3 green chilies, slit lengthwise (adjust to taste)
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon garam masala
– 1/2 cup water (or more, as needed)
– 1 cup coconut milk (optional, for a richer curry)
– Fresh cilantro leaves, chopped (for garnish)
– Salt to taste

2. Instructions

Step 1- Marinate the Beef:

– In a large bowl, mix the yogurt, ginger-garlic paste, turmeric powder, red chili powder, ground coriander, garam masala, and salt.
– Add the beef cubes to the marinade and mix well to coat the pieces evenly.
– Cover and refrigerate for at least 1 hour, or overnight for the best flavor.

Step 2- Cook the Beef:

– Heat the oil in a large pot or Dutch oven over medium heat.
– Add the finely chopped onions and cook until they become golden brown, stirring occasionally.
– Add the ginger-garlic paste and green chilies, and cook for another 2 minutes until fragrant.
– Add the chopped tomatoes and cook until they break down and become a thick paste.

Step 3- Add Spices:

– Stir in the turmeric powder, ground cumin, ground coriander, red chili powder, and salt.
– Cook the spice mixture for 2-3 minutes, allowing the oil to separate from the mixture.

Step 4- Cook the Beef:

– Add the marinated beef to the pot and stir well to combine with the spice mixture.
– Cook the beef over medium heat until it starts to brown on all sides.
– Add enough water to cover the beef. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender and cooked through. Stir occasionally and add more water if necessary.

Step 5- Finish the Curry:

– If using coconut milk, stir it in during the last 15 minutes of cooking.
– Check for seasoning and adjust salt and spices as needed.
– Sprinkle garam masala over the curry and stir well.
