Banoffee Pie is a delightful dessert that combines bananas, toffee, and whipped cream in a buttery biscuit crust. Here’s a classic recipe to make Banoffee Pie at home:
– Digestive biscuits or Graham crackers – 250g (about 2 cups), crushed into fine crumbs
– Unsalted butter – 100g (about 7 tablespoons), melted
– Dulce de leche or caramel sauce – 1 can (about 400g)
– Ripe bananas – 3-4, sliced
– Fresh lemon juice – 1 tablespoon (to prevent bananas from browning)
– Heavy cream – 300ml (1 and 1/4 cups), chilled
– Powdered sugar – 2 tablespoons (adjust to taste)
– Vanilla extract – 1 teaspoon
– Grated chocolate or cocoa powder for dusting
– Crush the digestive biscuits or Graham crackers into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing with a rolling pin.
– Transfer the crumbs to a bowl and mix in the melted butter until well combined.
– Press the mixture firmly and evenly into the base and sides of a 9-inch (23cm) pie dish or tart pan. Use the back of a spoon or a measuring cup to compact the crumbs.
– Chill the crust in the refrigerator for at least 30 minutes to firm up.
– If using dulce de leche from a can, simply spread it evenly over the chilled biscuit crust. Alternatively, if using caramel sauce, spread it evenly over the crust.
– Slice the bananas and toss them gently with lemon juice to prevent browning.
– Arrange the sliced bananas in an even layer over the toffee layer.
– In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to over-whip.
– Spread the whipped cream over the bananas in an even layer.
– Optionally, garnish with grated chocolate or dust with cocoa powder.
– Chill the Banoffee Pie in the refrigerator for at least 2-3 hours (preferably overnight) before serving to allow the flavors to meld together and the pie to set.
