Here’s a delightful recipe for baked yogurt with a pistachio crust:
– 2 cups plain yogurt (preferably full-fat)
– 1/2 cup sweetened condensed milk (adjust to taste)
– 1/2 teaspoon vanilla extract (optional)
– A pinch of salt
– 1 cup pistachios, finely chopped (unsalted)
– 1/4 cup butter, melted
– 2 tablespoons sugar (adjust to taste)
– 1/4 teaspoon cinnamon (optional)
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk the yogurt until smooth. Add sweetened condensed milk, vanilla extract (if using), and salt. Mix well to combine.
In a separate bowl, combine the finely chopped pistachios, melted butter, sugar, and cinnamon (if using). Mix until the pistachios are well coated.
Grease a baking dish or individual ramekins. Pour the yogurt mixture into the dish, then sprinkle the pistachio mixture evenly over the top.
Bake in the preheated oven for about 25-30 minutes, or until the edges are set and the center is slightly jiggly.
Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set further.
Once chilled, cut into squares (if using a dish) and serve. You can garnish with extra chopped pistachios or a drizzle of honey if desired.
