Here’s a delicious recipe for apple pie baked oats that’s easy to make and perfect for breakfast or a cozy snack!
– 2 cups rolled oats
– 1 teaspoon baking powder
– 1 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/4 teaspoon salt
– 2 cups almond milk (or any plant milk)
– 1/4 cup maple syrup (adjust to taste)
– 1 teaspoon vanilla extract
– 2 medium apples, peeled and chopped
– 1/2 cup raisins or walnuts (optional)
– 1 tablespoon coconut oil or vegan butter, melted
– 1 tablespoon brown sugar or coconut sugar
– 1/2 teaspoon cinnamon
Preheat your oven to 350°F (175°C) and lightly grease a baking dish (8×8 inches works well).
In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
In another bowl, whisk together the almond milk, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until well combined. Gently fold in the chopped apples and raisins or walnuts, if using.
Pour the mixture into the prepared baking dish, spreading it evenly.
In a small bowl, mix the melted coconut oil, brown sugar, and cinnamon. Drizzle this mixture over the oats.
