– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon nutmeg (optional)
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup buttermilk (or milk with 1/2 teaspoon vinegar)
– 2 cups apples, peeled, cored, and diced (about 2 medium apples)
– 1/2 cup all-purpose flour
– 1/3 cup brown sugar
– 1/2 teaspoon ground cinnamon
– 1/4 cup unsalted butter, cold and cubed
– 1/4 cup rolled oats (optional)
– Pinch of salt
Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a medium bowl, mix together the flour, brown sugar, cinnamon, and salt. Add the cold cubed butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. Stir in the rolled oats, if using. Set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry mixture to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined. Gently fold in the diced apples.
Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle the crumble topping evenly over the batter.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it with foil during the last 15 minutes of baking.
Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.
