Master The Art Of Making Appe With 4 Quick Steps

Appe, also known as Paniyaram or Paddu, is a popular South Indian snack that is round and typically bite-sized. They are made from a batter that is poured into a special cookware called an appe pan (paniyaram pan) with multiple round molds. The batter is usually a combination of fermented rice and urad dal, similar to dosa or idli batter, but thicker.

Appe, also known as Paniyaram or Paddu, are a South Indian snack made from a batter typically based on rice and urad dal (black gram dal). Here’s a basic recipe for Appe:

1. Ingredients

– 1 cup idli rice (or regular rice)
– ¼ cup urad dal (black gram dal)
– ½ teaspoon fenugreek seeds (optional)
– Salt to taste
– 1 cup sour buttermilk (or yogurt mixed with water)
– 1 teaspoon fruit salt (eno)
– Oil for greasing the appe pan

2. Instructions:

Step 1- Soaking and Grinding:

– Wash the idli rice and urad dal separately.
– Soak them along with fenugreek seeds in water for 4-5 hours.
– Drain the water and grind them into a smooth batter using a little water as needed.

Step 2-  Fermentation:

– Transfer the batter into a bowl, add salt, and mix well.
– Add sour buttermilk (or diluted yogurt) to the batter and mix thoroughly.
– Cover and allow the batter to ferment overnight or for at least 8 hours in a warm place.

Step 3- Making Appe:

– After fermentation, the batter will have risen and become slightly airy.
– Heat an appe pan (also known as paniyaram pan) on medium heat and grease each mold with a little oil.
– Add a pinch of fruit salt (eno) to the batter and mix gently.
– Pour spoonfuls of batter into each mold, filling them up to 3/4th full.
– Cover and cook on medium-low heat for a few minutes until the bottom side turns golden brown and crispy.

Step 4- Flipping and Cooking:

– Carefully flip each appe using a wooden skewer or spoon.
– Cook the other side until golden brown and crispy.

Step 5- Serve:

– Remove the cooked appe from the pan and serve hot with coconut chutney, tomato chutney, or any chutney of your choice.
