– 1 teaspoon red chili powder
– Salt to taste

– 2 tablespoons vegetable oil or ghee
– 1 large onion, finely chopped
– 2 large tomatoes, finely chopped
– 2 tablespoons ginger-garlic paste
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds (optional)
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1 teaspoon ground cumin
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder (adjust to taste)
– 2 medium potatoes, peeled and cut into chunks
– 1 cup water or chicken broth
– Salt to taste
– Fresh cilantro for garnish

Step 1- Marinate the Chicken:
– In a bowl, combine the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well, cover, and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor.
Step 2- Prepare the Curry Base:
– Heat 2 tablespoons of vegetable oil or ghee in a large pot or deep skillet over medium heat.
