Here’s a simple recipe to make Aloo beans curry:
– 2 medium potatoes (aloo), peeled and cubed
– 200 grams green beans (beans), trimmed and cut into 1-inch pieces
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 2-3 green chilies, slit (adjust to taste)
– 1 teaspoon ginger-garlic paste
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– Salt to taste
– 2 tablespoons oil
– Fresh coriander leaves for garnish
– In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
– Add chopped onions and sauté until they turn golden brown.
– Stir in the ginger-garlic paste and sauté for a minute until fragrant.
– Add the chopped tomatoes and green chilies. Cook until the tomatoes soften and oil starts to separate.
– Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
– Add the cubed potatoes and green beans to the pan. Stir to combine with the spice mixture.
– Pour in about 1 cup of water, cover the pan, and let it simmer on low heat until the potatoes and beans are tender (about 15-20 minutes).
– Once cooked, stir in the garam masala and cook for an additional 2-3 minutes.
– Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
