To make Alia Bhatt’s zucchini sabji, saute cumin seeds, onions, and green chili in oil, then add ginger-garlic paste and chopped tomatoes. Mix in spices [turmeric, coriander, cumin, red chili powder and salt] then add diced zucchinis and cook until tender. Garnish with fresh coriander leaves. Serve hot with roti, paratha, or rice.
Ingredients:
2 medium zucchinis, diced
1 tablespoon oil
1 teaspoon cumin seeds
1 medium onion, finely chopped
1 tomato, finely chopped
1 green chili, slit (optional)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Instructions:
1.Prepare the Ingredients:
Wash and dice the zucchinis.
Finely chop the onion and tomato.
2. Cook the Sabji:
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add the chopped onion and green chili (if using) and sauté until the onion turns golden brown
Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the masala.
Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a minute.
Add the diced zucchinis and mix everything together. Cover the pan and cook on low heat for 10-15 minutes or until the zucchinis are tender, stirring occasionally to prevent sticking.
3. Finish and Serve:
Once the zucchinis are cooked, garnish with fresh coriander leaves.
