Lal Peda is a delicious Indian sweet prepared by caramelizing khoya with ghee and sugar, enhanced with cardamom and optional saffron for flavor. Ingredients
- Khoya (mawa): 2 cups (preferably unsweetened)
- Powdered sugar: 1 cup (adjust as per taste)
- Ghee: 2 tablespoons
- Cardamom powder: 1 teaspoon
- Milk: 2 tablespoons
- Saffron strands: A few (optional)
- Chopped nuts: For garnish (optional)
Step-by-Step Recipe
1. Prepare the Khoya
- Heat a heavy-bottomed pan on low to medium heat. Add 2 cups of grated or crumbled khoya.
- Stir the khoya continuously to avoid burning. Cook until it turns light golden brown and releases a pleasant aroma. This caramelization gives the lal peda its unique flavor.
2. Incorporate Ghee and Sugar
- Add 2 tablespoons of ghee to the khoya and mix well.
- Once the khoya cools slightly (but is still warm), add 1 cup of powdered sugar gradually while mixing to ensure there are no lumps.
3. Add Flavor
- Sprinkle 1 teaspoon of cardamom powder into the mixture.
- If using saffron, soak a few strands in 2 tablespoons of warm milk for 5 minutes and add it to the mixture for added richness and flavor.
4. Cook and Shape
- Cook the mixture on low heat while stirring continuously. It will start to thicken and leave the sides of the pan.
- Remove from heat and allow the mixture to cool slightly until it is manageable to handle.
5. Shape the Peda
- Take small portions of the mixture and roll them into smooth balls. Flatten slightly to give the traditional peda shape.
- If desired, press a chopped nut or saffron strand into the center of each peda for garnish.
6. Cool and Serve
- Place the pedas on a plate and let them set at room temperature for 1–2 hours or refrigerate for 30 minutes.
- Once firm, your Lal Peda is ready to serve. Store in an airtight container and consume within a week.
