Ingredients:

  • Rice cakes (Tteok): 200g (available at Asian stores or make at home using rice flour).
  • Noodles: 100g (udon, ramen, or any other thick noodles of your choice).
  • Fish cakes (optional): 100g, cut into bite-sized pieces.
  • Gochujang (Korean chili paste): 2 tablespoons.
  • Gochugaru (Korean chili flakes): 1 tablespoon (adjust for spice level).
  • Soy sauce: 1 tablespoon.
  • Sugar: 1 tablespoon (for sweetness balance).
  • Garlic: 2 cloves, minced.
  • Sesame oil: 1 teaspoon.
  • Water or broth: 2 cups.
  • Green onions: 2-3, chopped for garnish.
  • Sesame seeds: 1 teaspoon, for garnish.
  • Boiled eggs (optional): 1-2, for serving.
  • Vegetables: (optional) Sliced cabbage, carrots, or bell peppers.

Instructions:

  • Prepare the Rice Cakes:
    • If using store-bought rice cakes, soak them in warm water for 10-15 minutes to soften. If making homemade, prepare the rice cakes using rice flour, water, and steam them until chewy.
  • Cook the Noodles:
    • In a pot of boiling water, cook the noodles according to package instructions. Drain and set aside.
  • Prepare the Tteokbokki Sauce:
    • In a mixing bowl, combine the gochujang, gochugaru, soy sauce, sugar, and minced garlic. Mix well to create the spicy sauce base. Adjust the amount of sugar or gochugaru according to your preference for sweetness and spice.
  • Simmer the Broth:
    • In a large pan, pour in 2 cups of water or broth (chicken or vegetable broth for added flavor). Bring it to a simmer over medium heat.
  • Add Rice Cakes and Fish Cakes:
    • Once the broth simmers, add the soaked rice cakes and fish cakes (if using). Stir gently to ensure the rice cakes don’t stick to the bottom of the pan. Cook for about 5-7 minutes until the rice cakes soften and become chewy.
  • Add Noodles and Vegetables:
    • Once the rice cakes are cooked, add the pre-cooked noodles and any optional vegetables like cabbage, carrots, or bell peppers. Stir to mix everything together. Allow the vegetables to soften, and let the noodles soak up the sauce for about 3-5 minutes.
  • Finish with Sesame Oil:
    • Drizzle a teaspoon of sesame oil over the mixture for a nutty flavor. Stir everything to combine. If you want a thicker sauce, let it simmer for a few more minutes until the sauce reduces to your desired consistency.
  • Garnish and Serve:
    • Transfer the Tteokbokki noodles to a serving bowl. Garnish with chopped green onions and a sprinkle of sesame seeds. You can also add sliced boiled eggs on top for a classic touch.
