Here’s a delicious and easy recipe for shakshuka, a flavorful Middle Eastern dish of poached eggs in a spicy tomato sauce!

1. Ingredients

– 2 tablespoons olive oil
– 1 onion, diced
– 1 red bell pepper, diced
– 2-3 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon cayenne pepper (optional)
– 1 can (14 oz) diced tomatoes (or fresh tomatoes, chopped)
– Salt and pepper, to taste
– 4-6 eggs
– Fresh parsley or cilantro, for garnish
– Crusty bread or pita, for serving

2. Instructions

Step 1- Sauté Vegetables:

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5-7 minutes until softened.

Step 2- Add Garlic and Spices:

Stir in the minced garlic, cumin, paprika, and cayenne (if using). Cook for an additional 1-2 minutes until fragrant.

Step 3- Add Tomatoes:

Pour in the diced tomatoes along with their juices. Season with salt and pepper. Let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.

Step 4- Create Wells for Eggs:

Use a spoon to make small wells in the tomato mixture. Crack an egg into each well, taking care not to break the yolks.

Step 5- Poach the Eggs:

Cover the skillet and cook for about 5-7 minutes, or until the eggs are set to your liking.

Step 6- Garnish and Serve:

Once the eggs are cooked, remove the skillet from heat. Garnish with fresh parsley or cilantro. Serve hot with crusty bread or pita for dipping.
