Cabbage soup is a healthy, hearty dish made with vegetables like cabbage, carrots, celery, and tomatoes. The soup is prepared by sautéing onions and garlic, adding the vegetables, and then simmering them in vegetable broth. Seasoned with bay leaves, thyme, salt, and pepper, it is simmered until the vegetables are tender. Optional ingredients like lemon juice or vinegar add a tangy flavor. The soup can be served with fresh herbs like parsley for garnish. For a heartier version, you can add chicken, beans, or tofu.

Ingredients:

  • 1 medium-sized cabbage (chopped)
  • 1 onion (chopped)
  • 2 carrots (peeled and chopped)

  • 2 tomatoes (chopped) or 1 cup canned tomatoes
  • 3-4 garlic cloves (minced)
  • 1 tablespoon olive oil

Instructions:

Step 1: Prepare the Vegetables

Start by chopping all your vegetables. Slice the cabbage into thin strips or rough chunks, depending on your texture preference. Chop the carrots, celery, onions, and tomatoes. Mince the garlic cloves.

Step 2: Sauté the Aromatics

In a large soup pot, heat the olive oil over medium heat. Add the chopped onions and garlic. Sauté for about 3-4 minutes until the onions become soft and translucent. This releases their sweetness and aroma.

Step 3: Add the Vegetables
