Aloo Gutuk is a traditional dish from Uttarakhand made with boiled potatoes sautéed in mustard oil and tempered with cumin, mustard seeds, dried red chilies, and a pinch of asafoetida. The potatoes are flavored with turmeric, coriander, and red chili powder, then cooked until crispy. Garnished with fresh coriander leaves, this dish offers a rustic, earthy taste. Ingredients:

  • 4 medium-sized potatoes (boiled and peeled)
  • 2 tablespoons mustard oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2-3 dried red chilies
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon red chili powder (optional, for spice)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • 2-3 tablespoons chopped coriander leaves (for garnish)

Instructions:

  • Prepare the Potatoes:
    • Boil the potatoes until they are just cooked (not mushy). Let them cool, peel, and cut into bite-sized pieces.
  • Heat the Mustard Oil:
    • Heat mustard oil in a heavy-bottomed pan or kadhai until it starts smoking lightly. Reduce the flame to medium.
  • Temper the Spices:
    • Add cumin seeds, mustard seeds, and asafoetida to the hot oil. Let them crackle.
    • Break dried red chilies into halves and add them to the oil. Sauté for a few seconds.
  • Cook the Potatoes:
    • Add the boiled potato pieces to the tempered spices. Stir gently to coat the potatoes with the spices.
  • Add the Dry Spices:
    • Sprinkle turmeric powder, coriander powder, red chili powder, and salt. Mix well, ensuring the potatoes are evenly coated with the spices.
  • Cook Until Crisp:
    • Let the potatoes cook on a low flame for 8-10 minutes, stirring occasionally to avoid sticking. Cook until the edges of the potatoes turn slightly crispy and golden brown.
  • Garnish and Serve:
    • Turn off the heat and garnish with freshly chopped coriander leaves.
    • Serve hot as a snack, side dish, or with steamed rice and dal.
