Ingredients:

For the Vada (Lentil Dumplings)

  • 1-2 green chilies (finely chopped)
  • A pinch of hing (asafoetida)
  • Water (as required for batter)

  • 2 cups fresh curd (yogurt)
  • ½ cup water (to adjust consistency)
  • 1 teaspoon sugar (optional)
  • ½ teaspoon salt
  • ½ teaspoon roasted cumin powder

For Garnishing and Serving

  • ½ cup tamarind chutney
  • ½ cup green chutney (mint-coriander)
  • ½ teaspoon red chili powder
  • ½ teaspoon chaat masala
  • ½ teaspoon roasted cumin powder
  • Fresh coriander leaves (chopped)
  • Pomegranate seeds (optional)

Step-by-Step Recipe to Make Soft Dahi Vada

Step 1: Soak and Grind the Dal

  • Rinse urad dal and moong dal thoroughly and soak them in water for 5-6 hours or overnight.
  • Drain the water and grind the dal to a smooth paste using minimal water. The batter should be thick and fluffy.
  • Add salt, cumin seeds, grated ginger, chopped green chilies, and hing. Mix well.
  • Whisk the batter for 5-7 minutes to make it light and airy, ensuring soft and fluffy vadas.

Step 2: Fry the Vadas

  • Heat oil in a deep pan or kadai over medium heat.
  • Wet your hands, take a small portion of batter, shape it into a ball, and gently drop it into the hot oil.
