Step-By-Step Guide: Make Delicious Mix Paratha Easily
Mix parathas are wholesome Indian flatbreads stuffed with a variety of vegetables and spices. The dough is made from whole wheat flour, while the filling includes potatoes, carrots, spinach, and flavorful seasonings. Cooked on a hot tawa with ghee, they are served hot with yogurt, chutney, or pickle.
Ingredients:
For the Dough:
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- Water (as needed)
- 1 tablespoon oil
For the Filling:
- 1 cup boiled and mashed potatoes
- 1/2 cup finely chopped spinach
- 1/2 cup grated carrots
- 1/4 cup boiled and mashed green peas
- 1/4 cup finely chopped onions
- 1 teaspoon grated ginger
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon chaat masala (optional)
- Salt to taste
- 2 tablespoons chopped coriander leaves
- 1-2 green chilies, finely chopped
For Cooking:
- Ghee or oil, for frying
Instructions:
1. Prepare the Dough:
- In a large mixing bowl, combine wheat flour and salt.
- Gradually add water and knead into a soft, pliable dough.
- Add oil and knead again for 2-3 minutes until smooth. Cover and let it rest for 20 minutes.
2. Prepare the Filling:
- Heat a pan and add 1 teaspoon oil. Add cumin seeds and let them splutter.
- Add grated ginger, chopped onions, and green chilies. Sauté until the onions turn translucent.
- Add mashed potatoes, spinach, grated carrots, mashed green peas, and all the spices: turmeric, red chili powder, garam masala, chaat masala, and salt.
- Mix well and cook for 3-4 minutes until the mixture is well combined and slightly dry.
- Turn off the heat, add chopped coriander leaves, and let the filling cool completely.
3. Assemble the Paratha:
- Divide the dough into equal-sized balls (about 6-8, depending on size).
- Roll out one dough ball into a small circle using a rolling pin.
- Place 2-3 tablespoons of the prepared filling in the center.
- Gather the edges of the dough to seal the filling, pinching it at the top to close securely.
- Flatten gently and roll it out again into a medium-thick paratha, being careful not to tear it.
4. Cook the Paratha:
- Heat a tawa or flat pan over medium heat.
- Place the rolled-out paratha on the hot tawa. Cook for 1-2 minutes until bubbles appear.
- Flip the paratha and drizzle ghee or oil around the edges. Cook for another 1-2 minutes.
- Flip again and press gently with a spatula to ensure even cooking. Cook until golden brown spots appear on both sides.
5. Serve the Mix Paratha:
- Remove the cooked paratha and keep it warm in a clean kitchen towel.
- Serve hot with a side of yogurt, pickle, or mint chutney. You can also enjoy it with a dollop of butter on top for extra richness.

- Ensure the filling is dry to prevent tearing while rolling.
- Rest the dough for at least 20 minutes for better elasticity.
- Use a medium flame to cook the paratha evenly without burning.
