To make Chicken Noodles, start by marinating thinly sliced chicken in soy sauce, cornstarch, sesame oil, and ginger-garlic paste. Cook your choice of noodles until al dente, then drain and set aside. In a large pan, sauté garlic, ginger, onions, bell peppers, and carrots before adding the marinated chicken. Stir-fry until the chicken is fully cooked and then combine it with the noodles. Toss everything with soy sauce, oyster sauce, and chili sauce for flavor. Serve hot, garnished with spring onions and sesame seeds.

Ingredients

For the Chicken Marinade:

  • 250 grams of boneless chicken, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil (or any cooking oil)
  • 1 teaspoon ginger-garlic paste
  • Salt and pepper to taste

For the Noodles:

  • 200 grams of noodles (egg noodles or any preferred type)
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced (any color)
  • 1 carrot, julienned
  • 2-3 spring onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2-3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon chili sauce (adjust to taste)
  • Salt and pepper to taste

Optional Garnish:

  • Fresh coriander leaves
  • Sesame seeds

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, combine the sliced chicken with soy sauce, cornstarch, sesame oil, ginger-garlic paste, salt, and pepper.
  2. Mix well until the chicken is evenly coated. Allow it to marinate for at least 15-30 minutes.

Step 2: Cook the Noodles

  1. Boil a pot of water and add a pinch of salt.
  2. Add the noodles and cook according to the package instructions until they are al dente.
  3. Drain the noodles and rinse them under cold water to stop the cooking process. Drizzle a little oil to prevent sticking and set aside.

Step 3: Stir-Fry the Vegetables

  1. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced onions and cook until they are translucent.
  4. Toss in the bell pepper and carrot, stirring frequently, and cook for 2-3 minutes until they are slightly tender but still crisp.

Step 4: Cook the Chicken

  1. Push the vegetables to one side of the pan and add the marinated chicken to the empty side.
  2. Stir-fry the chicken for about 5-7 minutes until it is cooked through and lightly browned.
  3. Mix the chicken with the vegetables once cooked.

Step 5: Combine Noodles and Sauce

  1. Add the cooked noodles to the pan with the chicken and vegetables.
  2. Pour in the soy sauce, oyster sauce (if using), chili sauce, and season with salt and pepper.
  3. Toss everything together until the noodles are well-coated with the sauce and heated through.

Step 6: Serve

  1. Remove the pan from heat and garnish with chopped spring onions, coriander leaves, and sesame seeds if desired.
