1. Ingredients

For the Veggie Marinade:

– 2 cups mixed vegetables (such as bell peppers, cauliflower, carrots, and paneer), cut into bite-sized pieces
– 1 cup plain yogurt
– 2 tablespoons lemon juice
– 1 tablespoon ginger-garlic paste
– 1 tablespoon tikka masala spice blend (available at Indian grocery stores)
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder (adjust to taste)
– Salt to taste

For the Masala Sauce:

– 2 tablespoons vegetable oil
– 1 large onion, finely chopped
– 2 cloves garlic, minced
– 1-inch piece of ginger, minced
– 1 can (14 oz) crushed tomatoes or 2 large tomatoes, finely chopped

2. Instructions

Step 1- Marinate the Vegetables:

– In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, tikka masala spice blend, ground cumin, ground coriander, turmeric, red chili powder, and salt.
– Add the mixed vegetables to the marinade, ensuring they are well coated.
– Cover and refrigerate for at least 30 minutes, or overnight for best results.

Step 2- Cook the Vegetables:

– Preheat your oven to 400°F (200°C) or prepare a grill.
