Ingredients:

  • 2 medium potatoes (boiled and mashed)
  • 1 cup mixed vegetables (carrot, peas, beans, corn, finely chopped and boiled)
  • 1/2 cup paneer (grated)
  • 1/4 cup breadcrumbs (for binding)
  • 2 tbsp cornflour or gram flour
  • 1 small onion (finely chopped)
  • 2 green chilies (finely chopped)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp garam masala
  • 1/2 tsp chaat masala
  • 1/2 tsp cumin powder
  • 1/4 tsp red chili powder
  • 2 tbsp coriander leaves (finely chopped)
  • Salt to taste
  • Oil for frying

Steps to Prepare Veg Kebabs

1. Prepare the Vegetable Mixture:

  • Heat 1 tsp of oil in a pan. Add ginger-garlic paste, sauté until aromatic, and add the chopped onions.
  • Sauté until the onions are translucent, then add the boiled mixed vegetables. Cook for 2–3 minutes to remove excess moisture.
  • Transfer the vegetables to a mixing bowl and let them cool.

2. Mix the Ingredients:

  • Add the mashed potatoes, grated paneer, breadcrumbs, and cornflour to the cooled vegetables.
  • Season with garam masala, chaat masala, cumin powder, red chili powder, and salt.
  • Add finely chopped coriander leaves and green chilies.
  • Mix everything thoroughly to form a dough-like consistency. If the mixture feels too wet, add more breadcrumbs.

3. Shape the Kebabs:

  • Take small portions of the mixture and shape them into cylindrical or round kebabs.
  • Ensure they are uniform in size for even cooking. Place them on a tray and refrigerate for 15–20 minutes to set.

4. Prepare for Cooking:

  • Heat oil in a pan for shallow frying. If you prefer healthier options, you can bake or air-fry the kebabs.
  • Alternatively, brush the kebabs with oil and grill them until golden brown.

5. Cook the Kebabs:

  • Place the kebabs gently in the hot oil. Fry them on medium heat, turning occasionally, until they are golden and crispy on all sides.
  • Remove the kebabs from the oil and place them on paper towels to absorb excess oil.

6. Serve:
