Start by boiling eggs and preparing a flavorful masala with onions, tomatoes, garlic, and spices. Sauté cumin seeds, curry leaves, and green chilies in oil to enhance the aroma. Add sliced onions and cook until golden, followed by tomatoes and spices to form a thick base. Add the boiled eggs and coat them with the masala, letting them simmer to absorb the flavors. Finish with garam masala for extra taste. Garnish with fresh coriander and serve hot with rice or bread.

Ingredients:

  • Eggs: 4 (hard-boiled)
  • Onions: 2 medium-sized, finely sliced
  • Tomatoes: 2 medium-sized, finely chopped
  • Green chilies: 2, slit
  • Garlic: 4 cloves, minced
  • Ginger: 1-inch piece, minced
  • Turmeric powder: ¼ teaspoon
  • Red chili powder: 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Garam masala: ½ teaspoon
  • Cumin seeds: ½ teaspoon
  • Curry leaves: A few
  • Oil: 2 tablespoons
  • Salt: To taste
  • Fresh coriander leaves: For garnish

Preparation Steps:

  • Boil and Prepare Eggs
    • Place the eggs in a pot of water and boil for 8-10 minutes until hard-boiled.
    • Cool them in cold water, peel, and make shallow slits around each egg to allow the spices to seep in.
  • Prepare the Masala Base
    • Heat oil in a pan on medium heat. Add cumin seeds and let them crackle.
    • Add minced ginger and garlic, followed by green chilies and curry leaves. Sauté for a minute until aromatic.
  • Cook the Onions
    • Add the sliced onions to the pan and sauté until golden brown. Stir occasionally to avoid burning.
  • Add Tomatoes and Spices
    • Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt.
    • Cook on medium heat until the tomatoes break down and form a thick masala. This may take 5-7 minutes.
  • Fry the Eggs
    • Push the masala to the sides of the pan and add the boiled eggs. Gently roll them in the pan so they coat evenly with the masala.
    • Add garam masala and mix gently to enhance the flavor.
  • Simmer and Finish
    • Cover the pan and let the eggs cook in the masala for 3-4 minutes, allowing them to absorb the flavors.
    • Adjust the salt and spice levels as needed.
  • Garnish and Serve
    • Garnish with fresh coriander leaves and serve hot.
    • Egg fry pairs wonderfully with steamed rice, chapati, or as a side dish with dal and curry.
