1. Ingredients

For the Sabji:

– 2 medium zucchinis, sliced or diced
– 2 tbsp oil (vegetable or mustard oil)
– 1 tsp cumin seeds
– 1/2 tsp mustard seeds (optional)
– 1/2 tsp turmeric powder
– 1 tsp cumin powder
– 1 tsp coriander powder
– 1/2 tsp red chili powder (adjust to taste)
– 1/2 tsp garam masala
– 1 medium onion, finely chopped
– 1 medium tomato, chopped
– 1 green chili, slit lengthwise (optional, for heat)
– Salt to taste
– Fresh cilantro for garnish

2. Instructions

Step 1- Heat Oil:

– Heat oil in a large pan or skillet over medium heat.

Step 2- Tempering:

– Add cumin seeds and mustard seeds (if using) to the hot oil. Let them splutter.

Step 3- Cook Onions:

– Add the chopped onions and green chili (if using). Sauté until the onions become translucent and start to turn golden brown.

Step 4- Add Tomatoes and Spices:

– Stir in the chopped tomatoes and cook until they soften and begin to break down.
– Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for a few minutes until the tomatoes are well combined with the spices.

Step 5- Add Zucchini:

– Add the diced or sliced zucchini to the pan. Stir well to coat the zucchini with the spice mixture.

Step 6- Cook the Zucchini:
