BISCUIT PUDDING

Biscuit Pudding is a delicious and easy-to-make dessert that combines layers of biscuits with a creamy, flavorful pudding. It’s a great way to use up leftover biscuits or cookies, and it’s perfect for a quick and satisfying treat. Here’s a simple recipe to make Biscuit Pudding:

1. Ingredients

– Digestive Biscuits: 1 packet (or any plain tea biscuits, about 200 grams)
– Milk: 2 cups
– Sugar: 1/2 cup (adjust to taste)
– Custard Powder: 2 tablespoons
– Cocoa Powder: 1 tablespoon (optional, for chocolate flavor)
– Vanilla Extract: 1 teaspoon
– Butter: 2 tablespoons
– Chopped Nuts: 1/4 cup (optional, for garnish)
– Raisins: 1/4 cup (optional, for garnish)
– Fresh Fruits: (such as sliced bananas, strawberries, or berries, optional, for layering or garnish)

2. Instructions

Step 1- Prepare the Custard Mixture:

– In a small bowl, mix the custard powder with a little cold milk (about 1/4 cup) to make a smooth paste. This helps prevent lumps.
– In a saucepan, heat the remaining milk with sugar over medium heat, stirring occasionally until the sugar dissolves.
– Add the custard paste to the heated milk, stirring continuously to avoid lumps.
– Cook the mixture over low heat until it thickens to a pudding-like consistency, about 5-7 minutes. If using cocoa powder for a chocolate flavor, add it here and mix well.
– Remove from heat and stir in the vanilla extract and butter until well combined.

Step 2- Assemble the Pudding:

– Arrange a layer of biscuits at the bottom of a serving dish or individual serving glasses.
– Pour a portion of the warm custard mixture over the biscuits, ensuring they are well covered.
– Repeat the layers with the remaining biscuits and custard, finishing with a layer of custard on top.

Step 3- Chill the Pudding:

– Allow the pudding to cool to room temperature, then refrigerate for at least 2-3 hours or until set. Chilling helps the pudding layers to meld together and improves the texture.

Step 4- Garnish and Serve:

– Before serving, garnish the top with chopped nuts, raisins, and fresh fruits if desired.
– Serve chilled and enjoy!

Biscuit Pudding is a versatile and crowd-pleasing dessert that’s both easy to make and delicious. It’s perfect for a family dessert, casual gatherings, or when you want a quick sweet treat. Enjoy!
