Start by dry roasting oats until golden and aromatic, then grind them into a coarse powder. Fry dry fruits in ghee and set aside. Cook the ground oats in milk and water, stirring until soft and thick. Add sugar, cardamom, and saffron to enhance flavor. Mix in fried dry fruits and a final spoonful of ghee for richness. Serve hot, garnished with more dry fruits if desired.

Ingredients:

  • Rolled oats 1 cup
  • Ghee (clarified butter) 3 to 4 tbsp
  • Milk 2 cups (full cream for richness)
  • Sugar 1/2 cup (adjust to taste)
  • Cardamom powder 1/2 tsp
  • Chopped dry fruits 2 tbsp (almonds, cashews, raisins)
  • Saffron strands a few (optional, soaked in warm milk)
  • Water 1/2 cup

Method:

Step 1: Dry Roast the Oats

  • Heat a heavy-bottomed pan.
  • Add 1 cup oats and dry roast them on medium flame for 3 4 minutes till they turn slightly golden and aromatic.
  • Keep stirring continuously to avoid burning. Set aside once done.

Step 2: Grind the Roasted Oats

  • Let the roasted oats cool slightly.
  • Grind them into a coarse powder using a mixer. This helps get a smoother halwa texture.

Step 3: Fry the Dry Fruits

  • In the same pan, heat 1 tbsp ghee.
  • Add chopped dry fruits and fry until golden. Remove and set aside.

Step 4: Cook the Oats

  • In the remaining ghee, add the ground oats.
  • Roast them for 2 3 minutes on low flame.
  • Now add 2 cups of milk and 1/2 cup of water gradually while stirring to avoid lumps.
  • Cook on low-medium flame, stirring constantly, until the oats absorb the liquid and become soft and creamy.

Step 5: Add Sweetness & Flavor

  • Add 1/2 cup sugar (adjust as per taste) and mix well.
  • Let it cook for another 5 6 minutes until the mixture thickens and leaves the sides of the pan.
  • Add 1/2 tsp cardamom powder and saffron milk (if using). Mix well.

Step 6: Final Touch

  • Add the fried dry fruits and 1 more tbsp of ghee if needed.
  • Stir everything together. Cook for another minute.
  • Turn off the flame. Serve hot, warm, or chilled as you like.

Tips:

  • You can use jaggery instead of sugar for a healthier version.
  • Add chopped dates or figs for natural sweetness.
  • Adjust the consistency by adding more milk if needed.
