Dahi Bhindi, also known as Bhindi in Yogurt Sauce, is a delicious Indian dish that combines the flavors of tender okra (bhindi) with a tangy and creamy yogurt-based sauce. Here’s a simple recipe to make this flavorful dish:

1. Ingredients:

For the Bhindi:

– 250 grams (about 2 cups) of fresh okra (bhindi), washed and dried
– 2 tablespoons vegetable oil
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon mustard seeds
– 1/4 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon coriander powder
– Salt to taste

For the Yogurt Sauce:

– 1 cup plain yogurt (preferably full-fat or Greek yogurt)
– 1 tablespoon besan (gram flour) or rice flour (to thicken the yogurt sauce)
– 1 tablespoon oil
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon mustard seeds
– 1/4 teaspoon asafoetida (hing) (optional)
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon garam masala
– 1/2 teaspoon sugar (optional, to balance the tanginess)
– Salt to taste
– Fresh coriander leaves for garnish

2. Instructions:

Step 1- Prepare the Okra:

– Slice the okra into 1/2-inch pieces. Ensure they are completely dry before cooking to avoid sliminess.
– Heat 2 tablespoons of vegetable oil in a pan over medium heat.
– Add cumin seeds and mustard seeds. When they start to crackle, add the sliced okra.
– Stir well, then add turmeric powder, red chili powder, coriander powder, and salt. Cook the okra, stirring occasionally, until it’s tender and slightly crispy (about 10-15 minutes). Set aside.

Step 2- Prepare the Yogurt Sauce:

– In a bowl, whisk the yogurt until smooth. Add the besan (gram flour) or rice flour and mix well. This will help thicken the yogurt sauce and prevent curdling.
– Heat 1 tablespoon of oil in a pan over medium heat.
– Add cumin seeds and mustard seeds. When they start to crackle, add asafoetida (if using).
– Add turmeric powder, red chili powder, and garam masala. Stir for a few seconds.
– Reduce the heat to low and slowly add the yogurt mixture to the pan, stirring continuously to avoid lumps and curdling.
– Cook the yogurt mixture on low heat until it thickens slightly (about 5 minutes). Stir occasionally.

Step 3- Combine and Serve:

– Add the cooked okra to the yogurt sauce. Stir well to combine.
– Cook for another 2-3 minutes to let the flavors meld together.
– Adjust seasoning with salt and sugar (if using) to taste.
– Garnish with fresh coriander leaves.

Step 4- Serve:

– Serve Dahi Bhindi hot with roti, paratha, or rice. It also pairs well with a side of pickles or papadam.
