Honey Chilli Potatoes are a delicious snack where crispy fried potatoes are tossed in a sweet, spicy sauce made with honey, soy sauce, chili sauce, and vinegar. The potatoes are first coated in a batter of corn flour and flour before being deep-fried until golden. The sauce is prepared with garlic, onions, and green chilies for extra flavor. Once the sauce thickens, the fried potatoes are added and coated well. Garnish with fresh coriander and spring onions for a burst of color and flavor. Serve hot as an appetizer or side dish for an irresistible treat.

Ingredients:

  • For the potatoes:
    • 4 medium-sized potatoes (peeled and cut into thin fries or wedges)
    • 2 tablespoons corn flour (cornstarch)
    • 1 tablespoon all-purpose flour (maida)
    • 1/2 teaspoon red chili powder
    • Salt to taste
    • Water (as needed)
    • Oil for frying
  • For the honey chili sauce:
    • 2 tablespoons honey
    • 2 tablespoons soy sauce
    • 1 tablespoon vinegar (white or apple cider)
    • 1 tablespoon tomato ketchup
    • 1 tablespoon chili sauce (or more for extra heat)
    • 1 tablespoon sugar (optional, adjust to taste)
    • 1/2 teaspoon crushed black pepper
    • 1 tablespoon finely chopped garlic
    • 1 small onion (finely chopped)
    • 2-3 green chilies (sliced)
    • 1/4 cup water (adjust consistency)
    • 1 tablespoon sesame oil (or regular oil)
    • Fresh coriander leaves (for garnish)
    • Spring onions (optional, for garnish)

Instructions:

Step 1: Prepare the Potatoes

  • Peel and cut the potatoes into thin fries or wedges. You can also cut them into small cubes if you prefer.
  • Rinse the potatoes thoroughly in cold water to remove excess starch. Drain the water and pat them dry using a kitchen towel.
  • In a bowl, mix corn flour, all-purpose flour, red chili powder, and salt. Add a little water to form a thick batter that will coat the potatoes.
  • Dip the potato pieces into the batter, ensuring they are evenly coated.

Step 2: Fry the Potatoes

  • Heat oil in a pan or deep fryer on medium heat. Once the oil is hot, carefully add the batter-coated potatoes in small batches.
  • Fry until they are golden brown and crispy (about 5-6 minutes). Drain them on paper towels to remove excess oil.

Step 3: Prepare the Honey Chilli Sauce

  • Heat sesame oil (or regular oil) in a pan over medium heat. Add finely chopped garlic and sauté for 1-2 minutes until fragrant.
  • Add chopped onions and green chilies to the pan, and cook for 2-3 minutes until the onions soften.
  • Next, add the honey, soy sauce, vinegar, tomato ketchup, chili sauce, and sugar (if using). Stir to combine all the ingredients.
  • Add water to adjust the consistency of the sauce, and let it cook for 3-4 minutes on low-medium heat, allowing the sauce to thicken slightly.
  • Season with crushed black pepper and taste for seasoning. Adjust the sweetness or spiciness according to your preference.

Step 4: Combine Potatoes and Sauce

  • Once the sauce is ready, add the fried potatoes to the pan.
  • Gently toss the potatoes in the sauce, ensuring they are well coated with the honey chili sauce.
  • Cook for 2-3 minutes, allowing the sauce to adhere to the potatoes and become slightly caramelized.

Step 5: Garnish and Serve

  • Garnish the Honey Chilli Potatoes with freshly chopped coriander leaves and optional spring onions.
  • Serve immediately as an appetizer, snack, or side dish, and enjoy the sweet and spicy flavors!

Tips:

  • You can adjust the spiciness of the sauce by increasing or decreasing the amount of chili sauce and green chilies.
  • If you want extra crunch, you can double fry the potatoes (fry them once, remove them, and then fry them again for 1-2 minutes until crispy).
  • For a vegan version, you can skip the honey and use maple syrup or agave syrup instead.
