Thin potato fingers are coated in a light batter, deep-fried, and tossed in a flavorful sauce made with ketchup, soy sauce, red chili sauce, honey, and vinegar. Ingredients:

  • For Potatoes:
    • 3 large potatoes (peeled and cut into thin fingers)
    • 2 tablespoons cornflour
    • 1 tablespoon all-purpose flour
    • Salt, to taste
    • Water, as needed
    • Oil, for deep frying
  • For Sauce:
    • 1 tablespoon oil
    • 1 tablespoon garlic, finely chopped
    • 1 teaspoon ginger, finely chopped
    • 1 medium onion, sliced
    • 1 medium capsicum, julienned
    • 1-2 green chilies, slit
    • 2 tablespoons ketchup
    • 1 tablespoon soy sauce
    • 1 tablespoon red chili sauce
    • 1 tablespoon honey
    • 1 teaspoon vinegar
    • 1 teaspoon sesame seeds
    • Salt and pepper, to taste
    • Spring onions, for garnish

Step By Step Instructions:

1. Prepare the Potatoes:

  • Peel and cut potatoes into thin fingers. Rinse them under cold water to remove excess starch.
  • In a bowl, mix cornflour, all-purpose flour, a pinch of salt, and water to make a light batter.
  • Coat the potato fingers in the batter and deep-fry them in hot oil until golden and crispy. Fry them in batches for better results. Set them aside on a paper towel to drain excess oil.

2. Sauté the Vegetables:

  • Heat 1 tablespoon of oil in a wok or deep pan.
  • Add chopped garlic, ginger, and slit green chilies. Sauté until fragrant.
  • Toss in sliced onions and capsicum. Stir-fry on high heat for 2-3 minutes to retain a slight crunch.

3. Prepare the Sauce:

  • Add ketchup, soy sauce, red chili sauce, and vinegar to the wok. Mix well.
  • Drizzle in honey and stir to combine. Adjust seasoning with salt and pepper to taste.

4. Combine the Potatoes:

  • Add the crispy fried potato fingers to the sauce and toss gently to coat them evenly.
  • Sprinkle sesame seeds over the potatoes and mix well.
