Gobhi Munchurian, a popular Indian-Chinese fusion dish, is known for its crispy cauliflower pieces coated in a tangy, spicy sauce. It’s a great appetizer or side dish that packs a flavorful punch. Here’s a recipe to make Gobhi Munchurian at home:

1. Ingredients

For the Cauliflower:

– 1 medium cauliflower, cut into bite-sized florets
– 1/2 cup all-purpose flour (or cornstarch for a gluten-free option)
– 1/4 cup rice flour (for extra crispiness)
– 1/2 tsp red chili powder
– 1/2 tsp turmeric powder
– 1/2 tsp black pepper
– Salt to taste
– 1/2 cup water (adjust as needed)
– Oil for frying

For the Sauce:

– 2 tbsp vegetable oil
– 2-3 cloves garlic, finely chopped
– 1-inch piece ginger, finely chopped
– 1 medium onion, finely chopped
– 1/2 cup bell peppers (any color), finely chopped
– 2-3 green chilies, sliced (adjust to taste)
– 1/4 cup soy sauce
– 2 tbsp red chili sauce (adjust to taste)
– 2 tbsp tomato ketchup
– 1 tbsp vinegar
– 1 tbsp sugar (optional, to balance the flavors)
– 1-2 tbsp water (for the sauce consistency)
– 1 tbsp cornstarch mixed with 2 tbsp water (for thickening, optional)
– 1/2 tsp black pepper
– 1/2 tsp sesame seeds (optional, for garnish)
– 2-3 green onions, chopped (for garnish)

2. Instructions

Step 1- Prepare the Cauliflower:

– In a large bowl, combine all-purpose flour, rice flour, red chili powder, turmeric powder, black pepper, and salt.
– Gradually add water to the flour mixture to make a smooth batter. The batter should be thick enough to coat the cauliflower florets.
– Heat oil in a deep pan or wok over medium heat.
– Dip each cauliflower floret into the batter and carefully slide them into the hot oil. Fry in batches to avoid overcrowding.
– Fry until the cauliflower is golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Step 2- Prepare the Sauce:

– Heat vegetable oil in a large pan or wok over medium heat.
– Add the finely chopped garlic and ginger, and sauté until fragrant.
– Add the chopped onion and bell peppers, and cook until they are tender but still crisp.
– Add the green chilies and sauté for another minute.
– Stir in soy sauce, red chili sauce, tomato ketchup, vinegar, and sugar. Mix well.
– If using, add the cornstarch-water mixture to thicken the sauce. Cook for a few more minutes until the sauce has thickened to your desired consistency.
– Season with black pepper and adjust salt if needed.

Step 3- Combine and Serve:

– Add the fried cauliflower florets to the sauce, tossing gently to coat them evenly.
– Cook for another 2-3 minutes, allowing the cauliflower to absorb the flavors.
– Garnish with sesame seeds and chopped green onions.

Step 4- Serve Hot:

– Serve Gobhi Munchurian hot as an appetizer or with steamed rice or noodles for a complete meal.
